Oil produced from the second harvest with more ripe olives, sent to the mill within 3 days of harvest-ing, is not filtered. Rather spicy in the first days after pressing, it returns mild after a couple of months and is great on any dish. This oil is produced with olives of all our cultivars: Moraiolo, Leccino, Fran-toio, Maremmano and Morcaio. This is also produced only with our olives in the Frantoio del Grevepesa, a few kilometers from our farm.
